Around 1 GB a day is still a sensible starting point, and for five days or more take a mid-to-upper total-allowance plan: topping up in eastern Hokkaido is far harder than topping up in Sapporo. Yes. Shiretoko, Lake Mashu, the Daisetsuzan mountains and some long eastern routes have genuinely uncovered stretches. That is infrastructure, and it applies to every carrier and every plan. Prepare with offline maps and screenshots, not a different SIM.

How should I set up navigation for driving?

Save the day's whole route as an offline map before you leave, screenshot your accommodation and destination details, and enter a MAPCODE or phone number into the rental car's own navigation as a backup. The car unit works without any connection.

Can I install a Japan eSIM before I fly?

Yes. Install at home on wifi the day before with mobile data off, then switch it on after landing.

Does winter affect the signal?

Cold does not remove coverage on its own, but heavy snow complicates roads and schedules, and phone batteries drain fast in low temperatures. Carry a power bank and keep key details screenshotted so a flat battery does not also mean no information.
